Dear Beloved Gluten Free Watchdog community,
During this very difficult time, here are some hopefully helpful tips. Please note that all recipes are my own from a book I wrote many, many years ago. If the photos don’t come through in this email, please cut and paste links into browser.
Difficulty eating? During times of stress, I’m prone to slight nausea and no desire to eat. If you are like me, this is what I do to combat this feeling… I make what I call gorp—nuts, dried fruit, and carob chips (see photo). I eat this mixture anytime I feel like I can stomach a few bites–calories and nutrients. A meal that I turn to again and again when I’m feeling nauseous is plain baked chicken, plain sautéed vegetables, and plain white rice. We don’t need fancy but we do need to eat.
Difficulty finding food? Many of you are having difficulty finding gluten-free food in your local stores, especially bread and pasta. In a pinch, you can use corn tortillas for melts or mini pizzas. Rice cakes tend to be available and can be topped with just about anything (see recipe for a tuna melt using rice cakes). Frozen gluten-free waffles also can be used after toasting.

Tired of rice? Try quinoa. It is best to buy quinoa that is labeled gluten-free and pre-rinsed. At the time of this writing, limited quinoa is available on Vitacost https://www.vitacost.com/productsearch.aspx?ss=1&t=quinoa and via mail order at Wal-Mart https://www.walmart.com/search/?query=quinoa. I wanted to add, don’t forget to check ethnic shops. This is a great time to try double fried plantains. Makes the house smell heavenly and it’s such a festive treat.
