The manufacturer provides online product information, including: 

"The grain is spread out and steeped in water. After steeping is completed, the barley is allowed to germinate and sprout. During the germination process, more than 140 enzymes are created. These enzymes hydrolyze carbohydrates into sugars and break down proteins into amino acids. At just the right time, when sugar levels are optimal, the sprouted grain is kiln roasted rendering it non diastatic by stopping the enzymatic action, and the malt develops color and flavor."
