Eden Foods Barley Malt Syrup (Not Labeled GF)

The following report on Eden Foods Barley Malt Syrup (Not Labeled GF) will inform you of the amount of gluten found in this product during testing.

General Product Information

Manufacturer: Eden Foods

Note: Gluten Free Watchdog is in the process of testing a handful of malt-based products. We are testing these products not because we think they are safe to eat but because it is important to assess the levels of intact and hydrolyzed gluten using the sandwich and competitive R5 ELISAs.

Ingredients: Organic sprouted barley, Water

The manufacturer provides online product information, including:

"The grain is spread out and steeped in water. After steeping is completed, the barley is allowed to germinate and sprout. During the germination process, more than 140 enzymes are created. These enzymes hydrolyze carbohydrates into sugars and break down proteins into amino acids. At just the right time, when sugar levels are optimal, the sprouted grain is kiln roasted rendering it non diastatic by stopping the enzymatic action, and the malt develops color and flavor."

Please consider the highlighted section above when you view the results of testing.
