What do you offer that is gluten-free? From day one we have not used wheat or any genetically modified grain. All of our cookies start out with an organic whole spelt flour, applesauce and oatmeal base. Most people with gluten sensitivity are fine to digest spelt flour, which is actually quite high in protein and low in gluten and is not cross contaminated with GMO or non-organic wheat crops. However, we do offer three certified gluten-free flavors where we replace the spelt flour with a flour blend that is certified gluten-free.
